At the sea-view lounge Airodokoro, the in-house chef weaves Hashitate Port seafood and the cultural memory of the Kitamaebune trade into a single course. Dinner becomes the reason to stay.

Kitamae Cuisine combines fresh seafood landed at Hashitate Port with fermentation culture shaped by Kitamaebune maritime trade culture. A collaboration between the in-house chef and a “traveling chef” creates a seasonal course where tradition and originality meet.
